I always have chicken in my freezer, so this is an easy recipe for when I’m out of ideas for a tasty meal.
Ingredients:
1 store-bought Pizza Dough or homemade (recipe below)
1/2 cup Tomato purée
2 oz Chicken, cooked
2 Bell peppers (red and yellow), sliced
1 Onion, Chopped
1 cup Mozzarella cheese
Directions:
Preheat the oven to 400 degrees F. Roll out and spread the pizza dough, making sure to prick the base roughly with a fork so air bubbles wouldn’t form when cooked. Transfer the 2 rolled out pieces of dough to 2 different baking sheets.
Add the tomato puree to the dough, then the mozzarella cheese. Next, add onions and bell peppers.
Bake in for 10-15 minutes, until dough is cooked and golden brown.
Pizza Dough Ingredients:
1/2 cup warm water
2 teaspoons dry yeast
2 cups all-purpose flour
1 teaspoon salt
3 tablespoons olive oil
Homemade pizza dough Directions:
Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto the lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough (The dough can be used immediately or stored airtight in the refrigerator for 1 day)
